I kicked off the year by going dairy free. At least for a little while.
It’s going OK. I honestly feel great. I’ve known for awhile that my body would be much happier sans dairy, but still, it’s never easy giving up something you love. I mean, I did have a dream about cheese the other night, but, that’s to be expected, right?
With no milk or cream, my breakfasts needed something to look forward to. I can’t handle eggs every morning (although, I do love them, especially like this) so, I decided to piece together a new smoothie. I’ve made this one three times now! It’s so so good … well, for a green smoothie. And I don’t even like celery! It’s not candy; it has just a hint of sweetness. But, I promise, it’s good! And it starts your morning off in such a refreshing way.

Ingredients
- 2-3 celery stalks
- 1 large handful of frozen kale (I prepped and froze a bunch from our summer garden)
- 1/2 apple
- 1 banana
- 8 ounces canned coconut milk, equal parts cream and milk
- 1 scoop collagen peptides
- 1/3 cup water
- Handful of ice cubes
Directions
Pop it all into a blender and blend well. With our Vitamix I really don’t have to do any pre-cutting … it whips it up good in a minute or so!
