Gretchen signing in to report that I’m 36 weeks pregnant today and Christmas happenings are in full swing! I have so much done and still, so much to do! I’m giving myself about a week to wrap things up and then, I’m kicking my feet up and taking life super easy until this little man arrives.

Truly, Christmas is busy for everyone and being a mom is all about prioritizing the essentials and the non-essentials. For me, I’m letting go of fancy meals and choosing the quick, easy, but still delicious route. During my recent grocery shopping run at Walmart I picked up a Red Baron® Thin & Crispy Pepperoni Pizza. Pizza is one thing that makes my whole crew happy — even Max! 

I didn’t stop at pizza though. Every substantial family dinner deserves a little side and if I can make that side green in color AND get everyone to consume it, I pretty much consider myself Mother of the Year. Enter pizza pesto dip! pizza pesto dip

Ingredients
  1. 1/2 cup pesto
  2. 1/4 cup ranch dressing
  3. 1/4 cup cream cheese, softened
  4. 1 clove of garlic, pressed
Instructions
  1. Measure and add each of the ingredients into a large mixing bowl. With a spatula or hand mixer, blend well. Refrigerate until ready to serve.
Notes
  1. This recipe can easily be doubled or tripled depending on the size of your crowd.

I give my Mom all the credit for my excitement over holiday themed food. As a Kindergarten teacher she is constantly thinking in themes so I was raised that way. Christmas food obviously needs to be red and green and the combination of Red Baron pizza and pesto dip fits the bill. End of story. 

When it comes to awesome, on-the-go selfies though … that’s all me :) When Jemma is old enough to have her own Instagram I fully expect that she will carry on this “gift” I have blessed her with! red baron selfie

    If you want to kick up the ‘green’ a notch, put the pesto in a food processor/blender and add some fresh spinach. After a few whirls, you’ll have a super-charged green pesto – in color and nutrition!

    I have never tried Pesto with pizza but that actually sounds very good. I will try this at my next holiday gathering.
