Jemma has officially entered a new phase of toddler eating … picky! I’m willing that it passes soon! My sweet girl who used to inhale anything and everything has become quite opinionated about what graces her plate.
There are only a few things I can count on for meal success right now and one of them is rice. Or as Jemma calls it “reece!”. Always with an exclamation :) It all started a few weeks ago when we were at our favorite Indian restaurant. She had no interest in the to-die-for tikka masala, but the huge bowl of reece? BRING IT ON! Spoonful after spoonful, she filled up her tummy and was quick to tell us, “It’s good!”
Ever since I’ve been adding rice to many of our meals in an effort to sneak in a few healthy options. So far, so good – she’s enjoyed Mongolian Beef on top of rice, Mexican Lasagna with a side of rice, and this yummy breakfast for dinner recipe:
SWEET RICE PORRIDGE
serves: 2
prep time: 5 minutes
Ingredients
1 package (2 bowls) Minute Ready to Serve Rice
1/2 banana
1/4 cup coconut cream or half and half
dash of sugar and cinnamon
Directions
Heat Minute Ready to Serve Rice according to package directions. Pour into larger bowl and gently toss with coconut milk and sugar. Scoop back into Minute Ready to Serve mini bowls and top with a layer of bananas.
It’s super simple. It’s super sweet. And it’s the perfect alternative to a bowl of cereal or oatmeal on an evening when you need a lite meal in a rush. Oh, and of course, everything tastes better when served on a dinosaur place mat. Just ask Jem!

yummy! My kids don't like rice and I'm bummed!! but I might make something like that for myself :)
