Summer rolls have been one of my favorite summer eats – such a filling and refreshing meal! Here’s what you’ll need to whip up a batch of your own …
INGREDIENTS
- Rice paper
- Bean threads
- Bean sprouts
- Cilantro, chopped
- Carrots, shredded
- Cucumbers, peeled and cut into long strips
- Lettuce, chopped
- Shrimp
- Crunchy peanut butter
- Teriyaki sauce
DIRECTIONS
- Soak rice paper and bean threads according to package instructions
- Grill shrimp in a bit of oil
- Chop veggies
- Prep peanut sauce (1/3 cup crunchy peanut butter + 2/3 cup teriyaki sauce)
- Layer ingredients on rice paper and roll, tucking ends in before finishing the roll. It takes some practice so don’t feel bad if your first few are too loose or burst at the seams. It’s normal – they still taste fantastic :)
I can easily eat 2 of these, so depending on how many people you’re feeding, plan to have lots of ingredients on hand!
