Pioneer Woman Copycat

I’m back with another round of Pioneer Woman copycat recipes. First round here. Ree Drummond is seriously one of my favorite gals and her food is just scrumptious!

We buy a 1/4 of a cow every year and I had some roasts I didn’t really know how to cook. So, I turned to Ree and my very first pot roast turned out, well, perfect! I’m actually not a pot roast kind of gal, but the whole family loved it. I’ve made it a second time since! Dominic loved the leftovers too.

Delicious, just delicious! Especially with all the fixin’s on top. We took this to community group and it was a hit among all those families too. Oh, and I’ve frozen it for a later meal and it thaws beautifully.

Too much work for what they were. I prefer a breakfast scramble where you can throw it all in one pan and call it good. It was a cute way to serve breakfast bites though, or even as an easy on the go kind of breakfast.

Green Bean Casserole

I first made this for Easter. For what it was, I enjoyed it, but I’m not really a mushy casserole kind of girl. I’ll admit, the beans stay very fresh tasting so that’s a perk. My mom on the other hand, loved it and took home all the leftovers :)

    I love the pioneer woman too! Gretchen, your pot roast looks so so good! Can I come to dinner? Pretty please! I could never cook that myself. I love eating meat but I cannot stand handling it when it's raw. Haha!

    I have a really hard time with raw chicken … I can prep the dinner, but then I don't usually feel like eating it. Pot roast for some reason doesn't bother me though! Lucky for my family :)
