Guest Post: Living on Love

Sometimes I like to imagine that all my blog friend’s kids are like Jemma’s virtual best friends. Am I the only one? Well, in Jemma’s virtual friend land – Miss Adair from Living on Love is one of them! Jemma and Adair are pretty close in age and I’ve loved following along with another mama who is experiencing all the joys of year one. Lacy’s After the Bump posts are some of my absolute favorites!
Howdy, folks! I’m Lacy from Living on Love. Thanks so much, Gretchen, for allowing me to share with your readers. I’m excited to share some stay-cation ideas with you today! A little about my family – I’m a teacher. My husband is a social worker. We have a nearly 1 year-old and another one on the way. As you can imagine, the money is rolling in. :) While we are huge dreamers and would love to see the world, it doesn’t always work out like that. We did manage to take a small vacation to Colorado this summer, and you can read about our adventures HERE
What’s awesome is that we live in a pretty hip town and can get out and do “vacationy” things quite often. So here’s a little sneak peak of a stay-cation (day-cation, really!) in Columbia, MO – a college town, smack dab in the middle of this country.
  • Breakfast out is a must. If there’s one thing that makes vacation is awesome, it’s being able to go out for a morning meal – even if all you do is grab coffee and a pastry. Our favorite place is Cafe Berlin. It’s a hippy joint, serving organic and local produce. They have the most unique and delicious things to choose from. My favorite is the Carey Burrito – eggs, apples, potatoes, feta, and tzaziki sauce. Hells to the yeah.
  • After that, we’d head out for a lovely stroll downtown. There are fantastic shops – vintage clothing, records, handmade soaps, books… I could go on and on. Another huge perk is that our downtown is located right next to the University of Missouri – our alma mater! Go Tigers! Mizzou is GORGEOUS! It makes for a wonderful walk, nap, photo session… Whatever your little heart needs. Side note from Gretchen … I have to say that my husband is a die-hard Kansas Jayhawks fan which means, by default, we dislike Mizzou. But, we still heart Lacy and her family :)
  • For lunch, we’d grab something delicious. (Our vacations always revolve around food. I hope you’re noticing the pattern.) Flat Branch is a local microbrewery. While my pregnant self can’t indulge in their top notch craft beers, I can relish in the glory of their famous burger (a burger topped with artichoke dip!) and their beer battered onion rings. Since we’re trying to be healthy, we have to make sure and get their Oil Stout Brownie for dessert. 
  • In the afternoon, there are a number of things we could do. We could go to Stephen’s Park, head to the awesome public library, check out our favorite nursery, Strawberry Hills, head to the farmer’s market, bike the Katy Trail, or go visit our local exotic animal sites. (Yes, for some reason their are zebras, camels, tigers, and lions all residing in Columbia, MO.)
  • That  night, we’d have to complete our weekly ritual by taking a drive out in the beautiful countryside until we make our way to the Missouri River. Dinner will be relaxed and outdoors at our favorite food trailer. Cooper’s Landing is a river marina and campsite that hosts Chim’s Thai Kitchen – a trailer serving authentic Thai cuisine that is out of this world. What’s awesome is that we can enjoy our pineapple fried rice while sitting literally 10 feet from the beautiful river while we watch the sun go down, live music in the background of it all…
  • Once the sun goes down, we’ll travel back home. We’ll put the baby to bed and my husband and I will continue our night by listening to our record player with the windows down or relaxing in the hammock out back beneath our garden lights..
