An Easy, Protein-Packed Lunch For Busy Moms

 

It’s a common occurrence that Max starts hustling for lunch as soon as I’ve wrapped up the breakfast dishes. Reid quickly follows suite. I usually try to stall them with an activity and set the timer so they can see countdown to a snack.

But then, you guessed it, once that final bite of snack pops in their mouth, they’re curious about lunch. As if I’ve ever forgotten to feed them!

Around noon lunch is officially served (even though it has been the hot topic of the day) and between refills, clean up, and questions about what comes next (it’s always nap/rest time and not a surprise in the slightest), I find myself not having eaten myself.

This is tragic on two fronts. One, moms deserve lunch too and two, I get really shaky (and abnormally agitated) if my blood sugar drops too low, especially when pregnant. 

So, easy protein-packed lunches have become my go to.

I’ll get on a kick with one thing or another. For awhile it was a cheese/cracker/salami plate, then it was apples and peanut butter (I know, not really a complete lunch, but it works in a pinch), then it was a protein smoothie. Hard-boiled eggs are usually in the rotation too. Right now though, it’s these super yummy Dannon Yogurt Drinks and a side of nuts.
