Rocky Road Bars

When the kids and I decided to do a big holiday baking day this year we brainstormed some of our favorite recipes and then sat down and scrolled Pinterest too. We wanted a mix of old and new recipes, past favorites and hopefully soon-to-be favorites.

Out of the eight recipes we made, these rocky road bars were the clear winner! I loved them because they were mega easy (yay for no-bake!), and the kids loved them, because, well – chocolate, marshmallows, and more goodness!

Hands down, whip these up this year! They freeze beautifully (in fact, I prefer to eat them frozen) and everyone we shared them with asked for the recipe. So, here they are, inspired by this recipe … Rocky Road Bars!

Ingredients

  • 1/4 cup salted butter
  • 3/4 cup creamy peanut butter
  • 2 cups semi-sweet chocolate chips
  • 2 cups Rice Krispies cereal
  • 3 cups mini marshmallows

Directions

Line a square baking dish with parchment paper.

Over low heat melt butter, peanut butter, and chocolate chips. Allow it to cool for a few minutes (so your marshmallows don’t melt) and then mix in Rice Krispies and marshmallows.

Pour batter into the lined baking dish and spread evenly. Freeze for one hour. Once firm, lift the parchment paper out and cut into squares. These bars are rich and delicious, so they don’t have to be big squares! In fact, after snapping the photo above I cut each bar in half again.

Store in the fridge or freezer. Serve at room temperature, chilled, or frozen … whatever you fancy!
