	Ingredients
			- 1 cup of quinoa, rinsed
- 28 oz can of diced tomatoes, crushed tomatoes work too
- 14 oz can Rotel
- 16 oz cans of black beans, rinsed and drained
- 15 oz can of corn, drained
- 3 cups chicken stock
- 2 chicken breasts, thawed
- 1 teaspoon garlic powder
- 2 teaspoons cumin
- 1 teaspoon crushed red pepper
- 2 teaspoons chili powder
- Toppings + sides: shredded cheese, sour cream, avocado slices, chips and/or corn bread
Instructions
			- This recipe is beyond simple. See all those ingredients up there - dump them all into a slow cooker and gently mix. Cook on low for 4-5 hours.
- With tongs, remove the chicken, place on on a large cutting board and shred with forks. Put the shredded chicken back in the slow cooker and cook for another hour on low.
- Spoon into a large soup bowl and top with shredded cheese, sour cream, and avocado slices if you want. Dip tortilla chips in your chili or have a side of buttered corn bread instead. Both are fabulous sides!
