Slow Cooker Beef Roast French Dip + a Giveaway

I live and die by my slower cooker in the Fall and Winter. It’s just so cozy to pop a meal in to cook while I go about my day. Especially with our homeschool preschool and high school pick up routine. Planning a slow cooker meal insures a hot dinner. Otherwise, that isn’t always a guarantee. Can you say cheese, cracker and salami platter?  Or fruit, yogurt and granola? Yeah, #slowcookermeals make us all happy around here :) 

Remember when I shared about our quarter beef purchase? Well, I thought it was about time for another recipe that matches up with one of those cuts! May I introduce a perfect pair … slower cooker meet beef sirloin tip roast. slow cooker beef roast french dip

Slow Cooker Beef Roast French Dip

Ingredients

  • 3 pounds (approximately) sirloin tip beef roast
  • 2 cups beef broth
  • 2 tablespoons seasoning blend of salt, pepper, garlic salt, etc.
  • Optional: Au ju seasoning/dip/packet
  • 2 onions
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Sandwich buns
  • Swiss cheese

Directions

Season the roast, pour beef broth in the bottom of the slow cooker. Place roast in slow cooker and cook on low for 6 hours. Remove roast from slow cooker and place on a cutting board. Allow the roast to rest for 15 minutes before slicing. Taste au jus for seasoning, adjust as needed. I added some Johnny’s liquid au jus to give it more flavor.

While the roast is finishing up, prep the other components of your sandwich. First, caramelized onions. In a cast iron pan melt butter and add olive oil. Slice 2 onions, add to butter oil combo and cook over low heat until caramelized.

Next, grill buns with a touch of butter, add sliced meat, onions and Swiss cheese. Dip in au jus and enjoy!

    I love to place chicken, salsa, and cream cheese (the last half hour or so). Shred the chicken and mix with the salsa/cream cheese sauce. Serve over rice or in a burrito. You can add all the burrito/taco toppings you like as well. Easy, quick, and delish!

    I love to make cooked apples/applesauce out of simply apples, brown sugar, and cinnamon. Dice the apples and throw in the desired amount of sugar and cinnamon. Cook on low until you can’t stand smelling autumn without eating it by the spoonful. :)

    Right now we’re doing a lot of the slow cooker chicken.
    1-2 packs of thighs and breasts
    1 package of onion soup mix
    1/2 cup ketchup
    1/4 C water
    1/4 C brown sugar
    Mix all in with the chicken and cook on low for 6hrs or until its falling apart. Serve with rice and veggies!

    Yum!! We are having family photos on Sunday so a slow cooker roast meal is planned… I think I should shift it and make this instead! (pinned so I don’t forget!)

    I make pot roast, chicken tikka and chili in my slow cooker the most often! Meatloaf, honey dijon chicken, pumpkin butter, applesauce, baked beans… my slow cooker pretty much lives on the counter in the Fall and Winter and even through the Spring! (great giveaway btw!)

      BBQ ribs are my favorite slow cooker meal. I don’t have a recipe but just put thawed or fresh ribs in the slow cooker and top with BBQ sauce. Set on low and cook all day.

    Carnitas is my favorite and the recipe is very easy. A couple taco seasoning packets, garlic, onion, garlic salt and cook overnight.

    Might be a little silly, but my favorite right now is to use it for baked potatoes. I have sweet potatoes in right now. Just wash, prick, cook on low for several hours. Then I fill with (often leftovers) toppings at dinner. Easy way to extend the use of leftovers. I am even placing corn on the cob, in their husks with silks trimmed, on top of the potatoes after adding a little water to steam cook. No need to boil water or dirty another pot!

    Easy pulled pork– a pork roast, bottle of beer and sliced onions to cook on low 6-8 hours before shredding with two forks.

    Overnight Crockpot Oatmeal

    1 cup steel cut or regular oats (NOT Quick Oats!)
    4 cups water
    1/2 cup milk
    1/4 cup brown sugar
    1 TBS butter
    1/2 tsp vanilla extract
    1 tsp cinnamon

    Combine all in crockpot and cook on low for 8hrs. Serve with milk & cinnamon sugar.

    Variations:

    Add up to 1 C raisins/dried fruit before cooking.
    Add 1 chopped fresh apple before cooking.
    Top with fresh fruit (in season) or canned fruit (drained).
    Add a pat of butter or a dollop of jam/preserves.
    Drizzle with honey.

    I like pinto bean from a slow cooker. Add water, beans, desired amount of cheddar cheese (for flavor and thicker sauce), a tbs of flour, half a pound of bacon, onion, and desired amount of salt/garlic powder. Cook until soft.

    I like making corned beef in the crockpot! I just put the corned beef in with some pickling spices, then cover it with water. That’s it! After cooking for about 10 hours, it’s SOOOO tender.
