Smart Tips for Holiday Cooking + a Scrumptious Cherry Cobbler Recipe

As a busy mama I don’t have time to mess with difficult recipes. 27 ingredient lists are not even close to being on my radar. Multiple layers or sauces with specific temperatures? No way! Super particular presentation … yeah, like that is gonna happen with Max hugging on my leg.
So, easy is my middle name when is comes to holiday cooking. It isn’t my middle name in any other situations! It helps that I’ve gathered some smart tips for holiday cooking over the years too.  

Be smart with me …

Plan ahead … Do not, I repeat, do not, be that girl in the grocery store the weekend before said holiday. Scroll through Pinterest and your favorite product’s website for recipe ideas in the weeks before and make your shopping game plan.
Bake wisely … I love love love bakeware that double as a pretty serving dish. It makes for less dirty dishes and who doesn’t love that? I mean, more time with family, less time on kitchen clean-up … count me in! Using PAM Cooking Spray helps on the clean-up end too – nobody likes scrubbing baked on food!
Keep it simple … Know what you do well and stick with it. Me? I can’t seem to make decent mashed potatoes no matter how many times I try. So, I leave that to my father-in-law. Desserts though? I’m the master :) And lucky for you, today I’m sharing a staple that everyone loves!

Ingredients

  • Pam Cooking Spray
  • 1 quart canned cherries, drained (or 4 cups of pitted cherries)
  • 1 package (9 ounces) yellow cake mix
  • 2 tablespoons sugar
  • 1 tablespoon cinnamon
  • 1/4 cup butter, melted + 2 more tablespoons
  • 1/4 cup slivered almonds
  • 1/4 cup shredded coconut

Directions

Melt butter in the microwave and blend into cake mix, sugar, cinnamon, almonds and coconut.

Spray your baking dish with PAM Cooking Spray – I love the baking variety which now leaves up to 99 percent less residue buildup while still being a fab no-stick helper. Yep, that’s a winner in my book! XOXO PAM, we love you ’round these parts!

Next, drain your cherries and gently lay them in the bottom of your baking dish. Spoon the cobbler crumble evenly over the top. Last, pop your cobbler in the oven!

Bake at 350 degrees for 35 minutes. Shortly before the timer beeps, melt the remaining 2 tablespoons of butter and before serving drizzle over the top of the cobbler crumble. That last bit moistens the crumble up just perfectly.

And just like that, you’ve got a perfect, easy peasy cherry cobbler for Christmas … or any other upcoming holiday! But let’s face it, I’ve got a soft spot for alliteration so Christmas Cherry Cobbler sounds the best :)

    What ISN'T my favorite holiday dessert? C'mon, G. I didn't get the name 3 dessert Tarleton for no reason! ;)I am trying out a new dessert dish to share at a family Thanksgiving this year – pear, vanilla and ginger tart with custard. Oh yea.     Hands down my favorite is Individual Fallen Chocolate Cakes served right out of the oven with Old Fashioned Vanilla Ice Cream on top! Yum. I think I'll go make some for tonight. :)

    We love "chocolate delight" … layered dessert with a shortbread bottom, cream cheese layer, pudding layer, topped by whipped cream. Uber rich but, once a year, delish.

    My dad makes an amazing eggnog cheesecake. I haven't had it for a few years, but he'll be making it when they stay with us for Christmas this year! Can't wait!

    Favorite holiday dessert is such a tough choice… every year I bake Christmas Cookies for friends and family to enjoy and it is really a fun tradition, but I think my favorite dessert has to be the pumpkin pie!

    One family favorite around the holidays is sweet potato pie. To me it tastes just like pumpkin pie, but the kids seem to like it more.asotv@aol.com
