Sunny Saturday

Two days ago we had 2 inches of snow at our house and it was freezing outside! Today, it probably got close to 70 degrees and the sun shone all day :) I’m so excited for spring and summer!

We kicked off the morning by hosting a Pampered Chef party at our house. Do you know about Pampered Chef? Seriously, my most favorite kitchen products EVER! If you’d like to check out the online catalog and place an order you’re totally welcome too.

Here’s a peek at some of my most favorite Pampered Chef products I’m hoping to order …

After the party, Jem and I snuggled down for a nap. I was uber tuckered out today. Last night I randomly had a small cup of regular coffee and it kept me up until 3am! Holy nonsense! I’m a decaf girl for life!

We scarfed down some lunch and I took Jemma for her 18 month photos. It took her a little while to warm up, but as soon as the photographer brought out bubbles Jemma was ready to smile. We popped into H&M afterwards. I was hoping to check out their maternity section, but this particular H&M didn’t have maternity – no bueno. I did find a top that will work for most of my pregnancy and Jemma scored the sweetest little summer dress. Brother even got a clearance penguin shirt for next winter :) I totally forgot my 20% off coupon for kid’s purchases, so if you go, be sure to take it with you (good through 4/2/12).

Jem is snuggled in bed now, we’re finally working back to her new 7:30pm bedtime after weathering daylight savings. How on earth can a 1 hour change time throw off a toddler’s schedule SO MUCH??? I’m about ready to dig into some strawberries and dip (8 ounces of cream cheese + container of marshmallow cream whipped together) … YUM!

Oh, and before I forget … we made the most amazing mini quiches this morning with all the Pampered Chef tools. I should have taken a picture, but I have pregnant brain and forgot.

MINI QUICHES a la Pampered Chef

Ingredients …
1 package (15 ounces) refrigerated pie crusts (2 crusts)
1/2 cup milk
2 eggs
4 slices bacon, crisply cooked, drained and chopped
1/2 cup finely chopped zucchini
1/2 cup finely chopped mushrooms
1 green onion with top, sliced
1/2 cup (2 ounces) shredded cheddar cheese
1 garlic clove, pressed
Dash of ground black pepper

Directions …
Preheat oven to 375 degrees.
Roll out each pie crust and use the PC Measure-All Cup or something similar to cut 24 circles.
Lay into a mini muffin tin and press down with something like this
Blend milk, eggs, bacon, veggies and spices in a bowl – this is my favorite PC one since it has a matching lid.
Fill each muffin space with a scoop of quiche mix and bake for 17-20 minutes.
