Banana Apple Oat Muffins

It’s not a secret that my Max struggles with food. Well, not all food, just healthy food. He loves chocolate and carbs. I guess he is like me … but with less self-control. Breakfasts are especially a struggle. He does like scrambled eggs, but honestly, we don’t always have time for a hot breakfast around here. So, I’ve been on the look out for on the go options. And I’ve found something! 

Thanks to my mama friend, Breanne, Banana Apple Oat Muffins or “Breakfast Cupcakes” as I’ve dubbed them make us all happy as we run out the door!

Ingredients
  1. 3 bananas, smashed
  2. 1 egg
  3. 1/2 cup sugar
  4. 1/4 cup apple sauce
  5. 1 cup oats
  6. 1 cup whole wheat flour
  7. 1 1/2 teaspoons baking soda
  8. 3 tablespoons flax, ground
Instructions
  1. Mix all ingredients together in a large bowl. Carefully spoon into muffin liners, filling 3/4 full. Bake at 375 degrees for 20-22 minutes.

    We really like these:http://redandhoney.com/blueberry-spinach-muffins/. I don’t put in the blueberries (the kids like to eat them on the side) and call them Hulk muffins, which makes it fun. Maybe you could call them Turtle muffins? :) Also, we make waffles and freeze them, and then defrost and make a waffle sandwich with peanut butter and honey or butter.
